Amber is a well cellared, rounded, malt-accentuated mixed culture ale wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW. Release Date Bottle Details ABV °P Cellaring 12pm, 5 May 2023 75cl 6% 12 5 years + Amber Blend #39 is a blend of five barrels, 1720 (11 month old Amber), 1801 (20 month old Amber), 1750 (21 month old Amber), 1704 (25 month old Amber) and 1713 (10 month old Amber). Our Amber recipe calls for a blend of freshly roasted grains in combination with pale malt to develop deep red colour and malt sweetness. Light levels of hopping balance with the toasty characters in an extended cooler fermentation with our house mixed culture. Following fermentation, we rack Amber into French oak barrels to further develop a smooth palate and express funky, tart characteristics from our indigenous yeast. We select and blend well evolved barrels for a beer with a desired malt forward character. The slightly heavier characteristics of this beer make a fantastic complement to food and offer a variety of flavours to both compare and contrast in pairing. Luke's tasting notes (unedited) - Just.fkn.lovely. Bright red currants, malt and cola on the nose. Warm and comfortable. Cacao and brown sugar. Rich and flavoursome. Sarsaparilla, vanilla and brown spices. Raisins and figgy sweetness meld with the typical hazelnut finish. Tempered acidity gives the beer more weight, texture and richness. A beautiful balanced Amber blend. 100 bottles available online.
