Eclipse is distilled from molasses using a combination of traditional copper pot stills and copper column stills, a dual-method approach that gives the Master Blender a broader palette of heavier and lighter distillates to work with. The resulting spirit is matured for up to two years in ex-American whiskey barrels — a deliberate choice that introduces character from casks previously holding corn, malted barley, or wheat-based whiskeys at varying char levels, contributing layers of vanilla, toasted oak, and gentle spice that distinguish Eclipse from rums aged exclusively in ex-bourbon wood.Tasting NotesAroma: Fresh vanilla and toasted almond greet the nose first, followed by ripe banana and a subtle floral lift. Underneath, light honeyed molasses and a whisper of oak add depth without heaviness.Taste: The palate opens with warm caramel and ripe banana, moving into a mid-palate where baking spice, dark chocolate, and light leather emerge. A gentle smoky oak presence anchors the flavors without overwhelming the fruit-forward profile.Finish: Medium in length, the finish carries sweet, lingering warmth with trailing vanilla and a faint cane sugar sweetness. A touch of dry oak and spice keeps it balanced rather than cloying. How to Drink Mount Gay EclipseEclipse is approachable enough to sip neat or over a single large ice cube, where the banana and vanilla notes become more pronounced as the rum opens up. Its blend of pot and column still character also makes it a versatile cocktail base: Rum Punch — The fruity, caramel backbone holds its own against citrus and grenadine without disappearing into the mix. Dark & Stormy — Eclipse's smoky oak and spice stand up well to ginger beer's bite, creating a balanced, layered drink. Daiquiri — The ripe banana and vanilla notes add complexity to the classic lime-sugar formula, lifting it beyond a simple sour. Eclipse delivers a fruit-forward profile led by ripe banana, warm caramel, and fresh vanilla, balanced by baking spice, dark chocolate, and a subtle smoky oak presence. The finish is medium-length with sweet, lingering warmth. How does Mount Gay Eclipse compare to Cockspur 5 Star? Both are Barbadian rums in a similar price tier, but Eclipse leans more heavily on vanilla, banana, and oak-driven warmth from its ex-American whiskey barrel aging, while Cockspur 5 Star tends toward a lighter, slightly drier profile. Eclipse also benefits from its dual pot-and-column still distillation, which gives it a fuller body than many competitors at this level. Is Mount Gay Eclipse good for cocktails? Eclipse is one of the most widely recommended mixing rums in its category, thanks to a flavor profile robust enough to stand up to bold ingredients like ginger beer and citrus, yet balanced enough not to overpower lighter cocktail builds.Where is Mount Gay Eclipse made? Mount Gay Eclipse is produced at the Mount Gay Distillery in St. Lucy, Barbados, a facility that has been in continuous operation since 1703. Barbados is one of the birthplaces of Caribbean rum production. What foods pair well with Mount Gay Eclipse? Jerk chicken — the rum's caramel sweetness complements smoky, spicy marinades. Grilled pineapple — fruit and vanilla echo the rum's tropical notes. Dark chocolate truffles — match the chocolate and banana tones in the spirit. Coconut shrimp — the toasted oak and spice cut through richness. Banana bread or bread pudding — reinforce the rum's ripe banana character. What sizes does Mount Gay Eclipse come in? The standard size is 750ml, and Eclipse is also commonly available in 1L and 1.75L formats depending on the market. Is Mount Gay Eclipse worth the price? Eclipse positions as an entry-level expression in the Mount Gay range and competes in the affordable aged-rum tier, making it strong value for a rum with over three centuries of distillery heritage, dual-still production, and a 2025 San Francisco World Spirits Competition Gold Medal. Why Mount Gay Eclipse? What sets Eclipse apart from other entry-level Caribbean rums is the combination of pot and column still distillation at a distillery with more than 320 years of unbroken production history. The use of ex-American whiskey barrels — rather than a single barrel type — introduces a wider spectrum of wood-derived flavors, from honeyed vanilla to toasted oak and light leather. Its Gold Medal at the 2025 San Francisco World Spirits Competition confirms that Eclipse competes well above its price tier. For anyone building a rum foundation or looking for a historically rooted Barbados expression that performs equally well neat or in cocktails, Eclipse remains a category benchmark.
