N'Ice Chouffe 4Pk is a 10% ABV Belgian dark strong ale sold in a four-pack of 330ml bottles, brewed by Brasserie d'Achouffe in the Belgian Ardennes. Earning a 96 on RateBeer and a 91 on BeerAdvocate, this unfiltered, bottle-refermented winter ale stands apart through its distinctive use of Curaçao liqueur, orange peel, and thyme — an unusual botanical trio rarely seen in the style. Quick Facts: ABV: 10% | Origin: Achouffe, Luxembourg Province, Belgium | Style: Belgian Dark Strong Ale | Brewery: Brasserie d'Achouffe Production & Heritage Brasserie d'Achouffe was founded in 1982 in the tiny hamlet of Achouffe, deep in the forested hills of the Belgian Ardennes. N'Ice Chouffe is unfiltered and undergoes refermentation both in the bottle and in barrels, building complexity and natural carbonation. What distinguishes it from standard Belgian winter ales is the addition of Curaçao liqueur blended with orange peel and seasoned with thyme — a deliberate departure from the more common practice of using dried citrus peel alone. The result is a richer, more layered spice character that integrates seamlessly with the beer's dark malt backbone. Tasting Notes Aroma: Dark dried fruit — dates, figs, and prunes — rises first, followed by warming brown sugar and molasses. A second wave reveals herbal thyme and candied orange peel, giving the nose an almost holiday-bread quality. Taste: The entry is plush and malt-forward, delivering raisin, toffee, and ripe plum. Mid-palate, the Curaçao liqueur influence appears as zesty, bittersweet orange that merges with banana esters and subtle caramel. A spicy bitterness from hops and orange peel builds toward the peak, balanced by residual sweetness from the dark sugars. Finish: Long and warming, as expected from a 10% ABV ale, with lingering allspice, walnut, and dried fruit. The thyme resurfaces at the very end, leaving a distinctive herbal signature that invites the next sip. How to Drink N'Ice Chouffe Serve at cellar temperature (50–55°F / 10–13°C) in a tulip glass or Belgian goblet to concentrate the complex aromatics. Pouring gently to leave the yeast sediment in the bottle yields a clearer pour, though many drinkers enjoy the added depth of including it. Given its 10% ABV and layered profile, this ale is best appreciated on its own rather than in cocktails — treat it as you would a fine digestif or after-dinner sipper. Best For Cold-weather evening sessions by the fireplace Gifting a craft beer enthusiast who appreciates high-gravity Belgian ales Pairing with a holiday cheese board or dessert course Cellaring for 1–3 years to explore how the flavors evolve with age Frequently Asked Questions What does N'Ice Chouffe taste like? N'Ice Chouffe delivers rich dark fruit — dates, plum, and raisin — layered with toffee, brown sugar, and a distinctive spicy-herbal character from thyme and Curaçao orange peel. It finishes warm and long, with allspice and walnut lingering beneath a gentle bitterness. How does N'Ice Chouffe compare to St. Bernardus Christmas Ale? Both are high-gravity Belgian dark ales brewed for winter drinking, but N'Ice Chouffe leans more heavily into herbal spice from thyme and Curaçao liqueur, while St. Bernardus Christmas Ale emphasizes caramel malt sweetness and a rounder, fruitier yeast profile. N'Ice Chouffe also tends to drink drier on the finish thanks to its hop bitterness and refermentation process. Is N'Ice Chouffe good for sipping neat? Absolutely — at 10% ABV with deep malt complexity and bottle-conditioned carbonation, it is designed to be savored slowly from a proper glass at cellar temperature rather than consumed quickly. Where is N'Ice Chouffe made? N'Ice Chouffe is brewed at Brasserie d'Achouffe, located in the village of Achouffe in the Luxembourg province of Belgium's Ardennes region, an area known for its rolling hills and long tradition of artisanal brewing. What foods pair well with N'Ice Chouffe? Rich stews like carbonnade flamande complement the beer's dark malt sweetness. Aged Gouda or Gruyère echo its caramel and toffee notes. Dark chocolate with sea salt mirrors the bittersweet orange character. Roasted duck with a fruit glaze bridges the dried-fruit flavors nicely. Spiced gingerbread or fruit cake aligns with the thyme and allspice finish. What sizes does N'Ice Chouffe come in? N'Ice Chouffe is commonly available in a four-pack of 330ml (11.2 oz) bottles, which is the standard retail format for this seasonal release. Is N'Ice Chouffe worth the price? N'Ice Chouffe positions as a premium Belgian dark strong ale, and its 10% ABV, bottle refermentation, and unique Curaçao-and-thyme recipe justify the higher price point compared to standard winter warmers. Strong critical ratings — 96 on RateBeer and 91 on BeerAdvocate — reinforce the value proposition for serious craft beer drinkers. Why N'Ice Chouffe? The combination of Curaçao liqueur, orange peel, and thyme is genuinely unusual in the Belgian dark strong ale category, where most brewers rely on a narrower spice palette. Brasserie d'Achouffe's dual refermentation — in both bottle and barrel — adds texture and depth that many competitors achieve with aging alone. With a 96 on RateBeer and a 91 on BeerAdvocate, the critical consensus is clear: this is one of the more accomplished winter ales available. For drinkers seeking a Belgian strong dark ale with real botanical personality rather than simple malt sweetness, N'Ice Chouffe delivers substance to match its strength.
