A sparkling mixed culture ale made with NSW grown regenerative organic barley and hopped with Pride of Ringwood hops from VIC. Release Date Bottle Details ABV °P Cellaring 30 Oct 2025 75cl 5.8% 10.0 3 years + Inspired by one of our all time staff favourite beers, a certain Adelaide based sparkling ale, this is an arranged marriage of this certain wort with our house culture that has made for a match we love. Serenity is a sparkling mixed culture ale made with NSW grown regenerative organic barley, hopped with Pride of Ringwood hops from VIC and refermented and bottle conditioned with organic sugar. This Batch #6 is different than the others as it has been aged in barrel for over one year before bottling. We had tucked away a single puncheon of the fifth batch of Serenity (brewed in September 2023) to see how it developed. Earlier this year, we tasted it and it had collected a real lambic-vibe to it... I'm not sure how to exactly put words to it... but I think the significant Pride of Ringwood element translated into some gueuze-like funk. We bottled this in May 2025 and it went ropey unexpectedly which was kind of cool too. Its through that now and ready to enjoy! 120 bottles available online.
